Recipe makes 6 to 8 appetizer portions
1 Sweet Onion, finely chopped
8 ounces Ground Beef or Bison
3 cloves Garlic, thinly sliced
2 tsp Smoked Paprika
2 Tb Red Wine
15 ounce can Muir Glen Roasted Crushed Tomatoes
2 Avocado, skin removed and avocado cut into quarters
2 Tb Fresh Basil or Parsley, chopped
Heat a sauce pot over medium high heat; when hot add enough grapeseed oil to coat the bottom of the pot. Add the onion and sauté until golden. Stir in the ground meat and sauté, using a chopping motions with the spatula to break up the meat, until cooked through. Stir in the garlic and paprika; sauté until fragrant, about 1 minute. Stir in the wine and tomatoes and bring sauce to a simmer.
Place a piece of avocado in a small, shallow serving dish. Ladle some of the hot meat sauce on top and garnish with the fresh herbs.
